If, however you have the pair in you hand and the third card is on the table the hand will be called a set. There is no difference between the two names, just an esthetic one. A hand three of a kind hand is 3s, 5d in your hand and 3d, 3c, 10c on the table, and a set is when you have in your hand 3s, 3h and on the table 2d, 3c, 8c.

Two pairs - to have two pair it is sufficient have amongst the best five cards a pair of a kind and another pair of another kind. The odds are very high, this is an extremely common hand.
